Not to mention...Ragú is no "bargain." It isn't what it purports to be - it is a bad imitation of the "real" thing. The same can be said of "food-processed" wines. I always tell people that I love Oreos, but that I understand what they are. Unfortun…

A History of Chianti

Told through the perspective of one of Tuscany's most important winegrowers, this series of small clips weaves a story about the evolution of the wine, and the winemaker's place in defining the wine.

Paolo De Marchi of Isole e Olena spent much of his childhood in the large estate his family purchased in the early 50s (when land was cheap in Tuscany). After graduating from oenology school in the mid 70s, we went on to becom… Continue

What is Wine?

It's been a few months since I posted here, and Kim suggested I write about wine.

Well, there's a loaded subject. I'll just start here with an interview with a real winegrower:

Now, I put this here because I just want to get something out of the way:

Most "wines" that we run into in the U.S. (the ubiquitous brands in every liquor store/ wine shop) ain't wine. They're food-processed beverages manufactured by multi-national, publicly traded marketing comp… Continue

Southern France - a Wine Region in Distress

For nearly 35 years, I've worked with wine (restaurants as a wine buyer, 18 years as a retailer), and what has come to fascinate me is the evolution of wine as a function of the culture in which it evolves. This, I can only explore in the "Old World" - the vinifera family of vines didn't exist elsewhere - so travel to Europe is a necessity.

Here's what's missed by so many "wine writers" and wine magazines. Wine is NOT a "consumer product." In the "Old World," where wine evolved, it was a necess… Continue

HI David,
Welcome to the Untours Cafe! I hope you'll enjoy hanging out here as much as I do. Sit back, relax, and take a few moments to look at some of the amazing photos and videos people are uploading. Or check out some of the really interesting discussions in both the forum and our destination pages.

If you are looking for some content in particular the Search box in the upper right, and the “Help” tab are good ways to get started. We love to be of help so don’t hesitate to ask us (either via email or on the forum) if you have trouble with anything. There are plenty of really friendly people who will be glad to lend a hand! We're still trying to figure out how to serve you some coffee or tea through the computer screen, but in the meantime, have fun!

Cheers,
Kim Paschen

PS: Great photos!!!!
